Ritu Dalmia photographed and filmed herself in her home in Goa. Where she cooks a famous Indian dish “Khichdi” made with love and hope inspired by the story of Penelope showing the strength and beauty there can be in the act of waiting.

Ritu’s famous Indian “Khichdi” recipe
Quantity for 4 people:
1 cup rice
1 cup yellow lentils
5 cups water
2 tbsp ghee
4 dry red chilly
2 pinches aseofetida
1tsp- cumin seeds
1 tsp turmeric/ kurkuma powder
3 tbsp- peanuts fried or roasted
Handful of coriander leaves chopped
For the raw banana
2 bananas, skin removed , cut into disc
Salt
Lemon juice and turmeric as rub for banana pieces
Oil For frying
